Vietnamese food is renowned all over the world, with the most popular dishes including pho, banh mi, or bun cha, but I will nominate spring rolls as the cream of the crop. To kick off, it is a seasonal food consumed during the spring, especially Lunar New Year. In some cases, it can be offered to the guests of the family. As it is myfavorite food, each year more than a hundred spring rolls can be prepared by my mother and me during Tet, which requires a great amount of time and patience. Moving on to the recipe, it is a simple but time-consuming process, from combining the ingredients, rolling the rice wrapper, to deep-frying the rolls to achieve a very crunchy food, then it can be eaten with sweet and sour dipping sauce. To finish, I will explain my love for this dish. Spring rolls is a must-have item in Vietnamese’s ritual offerings to ancestors, which symbolizes the principle of Yin and Yang in our culture. I hope that in the future, this food will become as popular in the world as pho or banh mi.
